  • Organic Lion's Mane mushrooms - 4 cups (shredded)

  • Whole wheat breadcrumbs - 2 cups (divided; you can also use almond flour for a gluten-free option)

  • Organic eggs - 2 large (beaten)

  • Organic Greek yogurt - 1/2 cup (in place of mayonnaise for a healthier alternative)

  • Organic Dijon mustard - 2 tsp

  • Low sodium Old Bay seasoning - 2 tbsp

  • Fresh lemon juice - 2 tbsp

  • Organic parsley - 1/4 cup (finely chopped)

  • Organic green onions - 1/4 cup (finely chopped)

  • Sea salt - to taste

  • Freshly ground black pepper - to taste

  • Organic olive oil - for frying (a healthier option than vegetable oil)


  1. Prepare the Lion's Mane: Shred the organic Lion's Mane mushrooms into fine pieces.

  2. Mix Ingredients: Combine shredded mushrooms, 1 cup whole wheat breadcrumbs or almond flour, beaten eggs, Greek yogurt, Dijon mustard, Old Bay seasoning, lemon juice, parsley, green onions, salt, and pepper.

  3. Form and Chill Cakes: Shape into patties, coat with remaining breadcrumbs, and chill for 30 minutes.

  4. Cook: Fry in olive oil over medium heat until golden brown, about 3-4 minutes per side.
